Mexican Salad

This delicious Mexican salad recipe is quick and easy to make, is totally customisable with your favourite ingredients and can work perfectly as a side salad or even a main dish. The salad is a chopped salad with colourful veggies, cilantro, lime salad dressing and some tortilla chips. All this combines into a super flavourful dish.

Ingredients

For the salad:

  • One medium-size Romain lettuce
  • Two medium-sized tomatoes or cherry tomatoes
  • One sliced red onions
  • 1 cup corn, boiled or steamed
  • Two cucumbers
  • Crispy thirty-year chips
  • Chopped avocado
  • Steamed black beans are kidney beans

For the Cilantro-Lime dressing:

  • 1 cup cilantro
  • One lemon
  • Half teaspoon cumin
  • One cloves garlic, finely minced
  • 1 teaspoon of cracked black pepper
  • 1 teaspoon oregano
  • Half teaspoon chilli flakes
  • 2 teaspoon olive oil (extra virgin)
  • 2 teaspoon brown sugar or honey
  • Salt, to taste

Method

  • 1)

    For the dressing, combine all the ingredients together and give it a good mix. Set aside.

  • 2)

    For the salad, combine all the base ingredients in a large bowl. Stir to combine. Add the dressing and stir all the ingredients well. Garnish with cilantro leaves.

  • 3)

    Serve with some tortilla chips on the top or place a bowl of chips on the side and let everyone help themselves.
