Sukhdi (Indian Protein Bar)
Sukhdi is an iron-rich protein bar made using peanuts, sesame seeds, watermelon seeds, sunflower seeds and jaggery. It is easy to make, tastes delicious and is highly nutritious. You can have one bar of this after your workout and you will forget about the store bought health bars. This bar has all the ingredients which are high in nutritional value. Once I started making Sukhdi at home, no one including my grown-up children prefers to have store bought health bars which are full of unhealthy ingredients.

Ingredients
- 75 g white sesame seeds
- 75 g roasted peanuts
- 160 g crushed jaggery
- Half teaspoon dry ginger powder
- Half teaspoon cardamom powder
- 3 tablespoon vegan butter
- 75 g watermelon and sunflower seeds
Method
- 1)
In a pan, add sesame seeds and dry roast them on a low flame until they turn golden brown in colour or the start popping. Take them out in a pan and let them cool down.

In the same manner, roast the peanuts and remove their skin after roasting.
- 3)
Add the watermelon and sunflower seeds to a hot pan and dry roast them on a medium flame.
- 4)
Heat the vegan butter in a pan and add grated jaggery to it. Make sure to do this process on a medium flame. Bring it to a boil and cook till the jaggery is melted and absorbs all the butter.

Grind all the roasted ingredients coarsely. Switch off the stove and immediately add all the roasted and coarsely grind it seeds to the hot jaggery mixture.

Mix the jaggery and all the ingredients properly.

Set the Sukhdi mixture into a greased cookie tray and allow it to cool for about 10-15 minutes.

Cut the Sukhri into small bars and enjoy it after a workout or even otherwise for a quick energy boost!
