idlis. Idlis are definitely everybody’s go-to choice for breakfast or a light meal because they are low in calories
and easy to digest as they are steamed. But here is a special twist to normal idlis with an exciting batata vada
stuffing.
A flavourful and colourful mixture of boiled potatoes, curry leaves and spices is cooked between layers of idli
batter to make a spongy and tasty delight. Enjoy this warm, fresh and delicious fusion idli with garlic chutney,
coconut chutney or peanut chutney.
Instant Bata Vada Stuffed Idlis

Ingredients
For batata vada filling
- 2 tbsp Oil
- 1 tbsp Mustard seeds
- 1 tbsp Cumin seeds
- 12-14 Curry leaves
- 1 tbsp Ginger-garlic paste
- 1 tbsp Green chilli paste
- 1 ½ cup Boiled and mashed potatoes
- Salt, to taste
- Hanfdul of fresh coriander leaves
- 1 ½ cup lemon juice
For idli
- 1 ½ cup Sooji (semolina)
- 1 cup curd
- 1 water
- Salt, to taste
- 1 cup fruit salt (Eno)
Method
- 1)
Heat oil in a wok or kadai. Add mustard seeds, cumin seeds and curry leaves and sauté them for 2-3 minutes.
- 2)
Add the ginger-garlic paste, green chilli paste and sauté for a minute.
- 3)
Add boiled and mashed potatoes, salt and cooked for 4-5 minutes on a low flame.
- 4)
Add some freshly chopped coriander leaves and lemon juice. Turn off the flame.
- 5)
Let the mixture cool down to room temperature and then shape them into the shape of small tikkis and keep aside.
For idlis
- 1)
In a mixing bowl, add sooji, salt and curd. Give it a good mix. Let the mixture rest for at least 30-40 minutes.
- 2)
Gradually add water and whisk the batter well. Let it rest for about 20 minutes.
- 3)
Grease the idli mould with oil.
- 4)
Add fruit salt to the idli batter. Make sure to add it just before steaming the idlis otherwise the idlis will not be soft and spongy.
- 5)
Fill the idli mould halfway with the batter. Place the batata vada tikki in the centre and top the other half of the mould with more batter. Sprinkle some vada pav sookhi chutney or podi masala on top.
- 6)
Steam the idlis for at least 10-12 minutes. To check whether the idlis are cooked or not, prick a toothpick and if it comes out clean then the idlis are well cooked. If not fully cooked yet, let them steam for another 2-3 minutes.
- 7)
Cool down the idlis for 1-2 minutes before de-moulding otherwise the idlis will stick to the mould.
