Kachhe Aam ki Launji is a tangy chutney made with raw mangoes. It is simple and easy to make, adds a zing to plain roti or parantha or poori. For a little more adventure, try it on bread – you will love it!

  • 4-5 Raw Mango , Medium size
  • 1 tbsp Mustard Oil
  • 1/8 tsp Asafoetida
  • 1/8 tsp Cumin Seeds
  • 1/8 tsp Fennel Seeds
  • 1/8 tsp Nigella Seeds
  • 1/8 tsp Fenugreek Seeds
  • 1/8 tsp Turmeric Powder
  • Salt, To taste
  • Pinch of Black Salt
  • 1/2 tsp Red Chilli Powder
  • 1/4 tsp Coriander Powder
  • 1/2 Cup Jaggery

Method

  • 1)

    Wash and peel mangoes and cut them into long thin slices.

  • 2)

    Heat mustard oil in a pan on low flame. Add asafoetida, cumin, mustard, fennel, fenugreek and nigella seeds. Allow them to crackle.

  • 3)

    Add the chopped mango pieces.

  • 4)

    Mix everything well. Add turmeric, red chilli, coriander powder and salt.

  • 5)

    Mix well and add jaggery/sugar and 3-4 tablespoons water.

  • 6)

    Mix well and cover it with a lid until the jaggery dissolves and the mango slices turn tender and your mixture becomes thick in consistency.

  • 7)

    Turn off the flame and let it come to room temperature.

  • 8)

    Aam ki launji is ready to serve. Store it in an air tight container.

Notes

Tips:

  • Don’t use ripe mangoes (yellow from inside) for making this launji because you will lose the tangy flavour.
  • Wash your mangoes properly and let them completely dry before cutting them for this recipe. Any moisture in the mangoes will make your chutney go bad.
  • Always make it using mustard oil for the best flavour. If not available, you can substitute it with peanut oil. Make to never use vegetable oil because it will not give you the best flavour.
