As winter’s are coming to an end, so is our time with the wholesome green leafy vegetables it brings with it. So, today I made methi thepla to enjoy the last bits of goodness of methi of this season.

Most traditional recipes are not just scrumptious but also amazingly healthy. A staple in Gujarat, Thepla is one such food. 

It is easy to make and is packed with healthy and beneficial ingredients. It has:
> Fenugreek (methi) which is extremely good for health
> Turmeric which is an antiseptic substance
> spices that act in retaining a good digestive tract. 
> whole wheat flour and besan which provide us with fibre and protein. 

A mixture of the above ingredients give thepla such a good flavour!

Health benefits:
- Assists in weight loss
- Boosts immunity 
- Enhances skin and hair quality 
- Lowers blood pressure and cholesterol 

If this wasn’t enough, Thepla is also travel friendly! It can be consumed anywhere and at anytime and can be kept at room temperature in an air tight container.

This recipe is simple, healthy, gluten free, vegan and a quick tea time Indian snack. 

This is made using Indian vegetables like capsicum, cauliflower, carrots, baby corn, mushrooms, potatoes and any other vegetables of your choice. Flattened rice or poha is used as the binding agent instead of bread crumbs. This is super healthy for diabetics, heart patients and weight loss. You can shallow fry instead of deep frying. 

Serve these with green chutney, red hot chutney or any other dip of your choice!

Lemon Rice (Vegan) South Indian lemon rice with p Lemon Rice (Vegan)

South Indian lemon rice with peanuts, curry leaves and fresh lemon juice. This homemade flavourful rice is tangy, vibrant and crunchy and makes for a great quick meal.

It is:
> easy to make and is ready in 30 minutes or less.
> full of flavor
> Vegan
> can be made gluten-free by skipping the asafoetida
> a healthy recipe

Ingredients:
2 tbsp oil
2 tbsp peanut
2 tbsp cashew
1 tbsp mustard seeds
1 tbsp urad Dal
1 tbsp Chana dal
2 dried red chilli
Pinch of asafoetida
Few curry leaves
1/2 tsp turmeric powder
2 cup cooked rice
1 tsp salt
2 tsp coriander leaves, finely chopped
2 tbsp lemon juice

Method:
> In a large Kadai heat the oil and roast your peanuts and cashews until they turn golden brown and crunchy. Keep them aside.
> In the same oil add mustard, urad and chana dal, dried red chilies, asafoetida and a few curry leaves. Once the start splattering reduce the flame.
> Add turmeric and sauté lightly.
> Now add cooked rice, salt and mix well. Make sure everything is well combined.
> Finally, enjoy the lemon rice!

Serving suggestions:
Lemon rice is typically served with pickles and papadum on the side or just plain curd. You can enjoy it as is too - it doesn’t really need any accompaniments.

Tips:
> Highly recommend using short grain rice like Sonamasuri. 
> It tastes the best with leftover rice.
> You can make the same recipe with raw Mango also.
> Frying the peanuts at the beginning and adding at the end helps hold their crunchiness.
> You can make this gluten-free by skipping the asafoetida

An innovative, mouthwatering and healthy snack alternative to deep fried refined flour Samosa.
If you have some leftover roti and don’t know what to do, make a Samosa! Yes you heard it right! Roti as a crispy texture with a flavourful potato stuffing inside. This healthy recipe uses very less oil for roasting Samosa on a Tawa hence full of health and goodness.

Ingredients
Regular wheat roti - 2 pcs
3 potatoes 
2 green chillies 
1/3 tsp red chilli powder 
1/2 tsp coriander powder 
1/3 tsp dry mango powder 
Salt as per taste 
4 - 5 tbsp oil
Handful of fresh coriander and mint leaves 

Recipe:
> Boil the potatoes, peel and mash them. 
> Add chopped green chilies coriander mint leaves and all spices mentioned above. Mix them well. 
> Give the Roti two folds. Fill the stuffing well into the gaps slightly press the sites. 
> Put oil in the pan and heat it on medium flame. 
> Shallow fry the samosas from all four sides. Once fried take it out from the pan and serve hot with dip of your own choice. 
> Your crispy roti samosa is ready. 

Enjoy this homemade goodness as an evening snack with garam chai or hot coffee. Definitely share your homemade samosa experience 😊

Left over Roti Pizza A healthy slice of life, her Left over Roti Pizza

A healthy slice of life, here is a guilt-free pizza for you. Yes folks, you can have delicious food while keeping the calorie count low! 

Here is not only a healthy pizza option, but also a simple desi method of cooking it on a frying pan or tawa. I have swapped unhealthy refined flour (maida) with whole wheat flour, processed cheese with homemade cheese, homemade pizza sauce instead of a store bought one and toppings of loads of vegetables! 

Ingredients:
Base: Leftover roti
Pizza sauce 

For toppings:
Onion - 1 - cut into slightly bigger chunks 
Capsicum - 1 - cut into chunks 
Tomatoes - 2 - cut into chunks 
Boiled Corn - a handful 
Italian seasoning - 2 tbsp
Red Chili Flakes - 1/2 tsp
Black Pepper Powder - 1/4 tsp 
Salt - to taste
Homemade Paneer - 1/2 cup

Instructions:
- Take leftover Roti and apply pizza sauce on the less cooked side.
- Add cut onions, capsicum, tomatoes and boiled corn.
- Sprinkle grated Paneer (cottage cheese) on top.
- Sprinkle chilli flakes, Italian seasoning, salt and pepper. 
- Heat the pan or Tawa on the stove.
- Once hot, keep the pizza and cover with a lid on medium heat.
- Cook till the cheese is slightly melted.

Your super healthy and delicious pizza is ready to serve! 

**Notes: 
You can choose any vegetables of your choice and adjust the seasoning according to your preference.

Khandvi is a small, savoury roll-up prepared from Khandvi is a small, savoury roll-up prepared from gram flour (besan) and curd batter topped with a tempering of sautéed mustard seeds, sesame seeds, curry leaves and desiccated coconut. To make it oil-free, you can also skip the seasoning as I have done. 

Sometimes life sends us a reminder that there is a whole lot of goodness in an Indian kitchen which we tend to forget. 
> Khandvi is low in calories as it is prepared using very less oil. 
> Besan is rich in protein as it is prepared from chickpea flour, is gluten free and provides fibre to the body which curbs hunger pangs and curd helps with digestion. 

So ditch those deep-fried and sugary snacks for some healthy khandvi and enjoy!

In my last post, I had shared the health benefits In my last post, I had shared the health benefits of swapping rice with millets in Idli batter. Bringing back those idlis in a new fusion recipe ~ CHAAT. 

Made by slightly pan frying the millet idlis with some spices, and a generous spread of green chutney, tamarind chutney and spread of crunchy sev. This is the best way to use left over idlis! Serve it as a tea time snack with a hot cup of masala chai or South Indian filter coffee. 

When I first heard about millet idlis, I was skeptical about how to use millets, how to make the batter etc. But once I tried it, all my doubts were demystified. The idlis turned out to be delicious and super soft without any extra effort but all the added health benefits!

Some recipes are simple but seem difficult till you try them. Do give it a try 😊.
