Gram Flour Crepes

This is a quick and easy recipe. These crepes are super healthy and can be put together in just a few minutes for breakfast. Gram flour is rich in numerous proteins, vitamins and minerals. The crepes also include vegetables which are rich in fibre and antioxidants. Protein and fibre helps you to stay full for a longer time as well. The carbohydrate and calorie content is also low so the recipe is perfect for weight loss.

Ingredients

  • 250 g gram flour
  • 75 g spinach, chopped
  • 50 g coriander leaves, chopped
  • One small onion, chopped
  • One medium-size carrot, Chopped
  • Half cup water (approximately)
  • Oil as required
  • Salt, to taste
  • Black pepper, to taste

Method

  • 1)

    Combine gram flour and salt in a bowl. Add water gradually and make a smooth and lump free batter.

  • 2)

    Add all the chopped vegetables and give it a good mix.

  • 3)

    Allow it to rest for 15–20 minutes.

  • 4)

    Heat a non-stick or iron pan on medium flame. Add a tablespoon of oil. Pour a ladle full of batter and spread it out evenly in a circular shape. Continue to cook on low flame until the crêpe is golden brown.

  • 5)

    Flip and cook the other side as well in the same manner.

  • 6)

    Serve it hot with a chutney or a dip of your choice.

Notes

  • Add water slowly. The batter should be of thick dropping consistency.
  • Always cook on medium low heat for a crisp crêpe.
  • Flip the crêpe only when you see small holes in the crêpes otherwise it will break
  • Make sure to always flip it gently.
  • The leftover crêpes can be stored in the fridge for 3–4 days in an airtight container.
