This delicious Mexican salad recipe is quick and easy to make, is totally customisable with your favourite ingredients and can work perfectly as a side salad or even a main dish. The salad is a chopped salad with colourful veggies, cilantro, lime salad dressing and some tortilla chips. All this combines into a super flavourful dish.

Ingredients
For the salad:
- One medium-size Romain lettuce
- Two medium-sized tomatoes or cherry tomatoes
- One sliced red onions
- 1 cup corn, boiled or steamed
- Two cucumbers
- Crispy thirty-year chips
- Chopped avocado
- Steamed black beans are kidney beans
For the Cilantro-Lime dressing:
- 1 cup cilantro
- One lemon
- Half teaspoon cumin
- One cloves garlic, finely minced
- 1 teaspoon of cracked black pepper
- 1 teaspoon oregano
- Half teaspoon chilli flakes
- 2 teaspoon olive oil (extra virgin)
- 2 teaspoon brown sugar or honey
- Salt, to taste
Method

For the dressing, combine all the ingredients together and give it a good mix. Set aside.

For the salad, combine all the base ingredients in a large bowl. Stir to combine. Add the dressing and stir all the ingredients well. Garnish with cilantro leaves.

Serve with some tortilla chips on the top or place a bowl of chips on the side and let everyone help themselves.
