Sol Kadi is a famous drink from the Konkan region in Maharashtra. It is a drink made from Kokum and Cononut milk. It is a natural digestive and cools down the digestive system. Kokum itself is supposed to be an excellent antidote for acidity. Serve it with steamed rice or just have it alone as a drink!

- 15-16 pcs Kokum
- 1 cup Coconut, Grated
- 2 Cups Hot Water
- 2 Cloves Garlic
- ¼ tsp Carrom Seeds
- 1 small piece Ginger
- 1 Green Chili
- Salt, as per taste
- Coriander leave, for garnishing
- 1 small piece Beetroot (to give a beautiful pink colour to the kadi!)
Method

Soak the kokum in 2 cups of hot water for 3-4 hrs. Keep it aside.
- 2)
In a blender jar, grind the grated coconut, garlic, ginger, chili, cumin and carom seeds together with a little bit of water.
- 3)
When it grinds to a thick paste-like texture, squeeze the milk out of the paste and keep it aside. Discard this remaining coconut pulp because with every consecutive milk extraction, the consistency of the milk will keep getting thinner instead of creamier.

Strain the water from the Kokum in a bowl.

To this kokum water add the coconut milk mixture. Mix well to get a creamy, pink-coloured Sol Kadi.

Add salt as per your taste.

Keep it aside in the refrigerator for 2-3 hours. It is important to let the Kadi rest for at least an hour before consuming it to get the best flavour.

Garnish with fresh coriander leaves and serve chilled along it steamed rice or simply enjoy it by itself as a drink!
Notes
- Use the seedless variety of Kokum.
Use fresh coconut milk.
Discard the Kokum after straining.
Discard the coconut extract after extracting the milk.
Remember to stir the Kadi every time you serve it. The coconut extract tends to rise to the top when the Kadi is left untouched for some time so it is important to stir it.
